This is something I grew up eating. My mom would make it with Saltines, but doing a lot of experimenting with different crackers, I’ve settled on Ritz style crackers (we do wheat crackers now because of our son, it’s better for diabetics). If you’re on a budget, this is a GREAT breakfast. Okay, okay, it’s great either way! But during these hard times when you might be living on that budget, grab some crackers and eggs at Aldi and feast away! The portion sizes are quite large, so you may even need to share.

Ingredients:

  • 3 Eggs
  • 12 Crumbled crackers
  • 1 Tbsp Unsalted Butter

Directions:

  1. Heat an 8″ frying pan on Medium.
  2. Melt butter and mix crackers into the butter, let sit for 1 minute.
  3. Scramble the eggs in a liquid measuring cup and carefully pour over the crackers.
  4. Lift edges of egg and tilt pan so the excess egg fills the edges. Do this only once all the way around the pan.
  5. Once the bottom is golden brown, flip the pie and let cook on the other side until golden brown.
  6. Let sit for 1 minute to cool & Enjoy!

Note:
You can put toppings on this or eat it plain. We used to put a thin layer of Jam on the top when I was young, but lately I’ve been enjoying it plain.
